White Mocha Brownie Bites - EASY

Ingredients

  • 1 box brownie mix (any kind) I used Chewy Fudge
  • 1 can pumpkin puree 15 oz
  • 2 tbsp Espresso Powder more to taste
  • 1 1/2 cups Chocolate Chips I used white chips

Instructions

  • Preheat the oven to 350 degrees Ferenheit
  • Mix pumpkin puree, brownie mix and espresso powder until well combined. Mix in chocolate chips.
  • Bake in mini muffin tins for 12-15 minutes or in bars for 20-25. Keep in mind that these will be doughy and delicious in the center, a toothpick likely wont come out clean due to the pumpkin. Texture is like a flourless cake.
  • Let it cool a bit, then enjoy.
    Or if you're like me and have 0 patience, just scoop some out with a spoon for a lava cake style treat!
