Water Kefir

Ingredients

  • 1/2 cup water
  • kefir grains
  • 1 cup organic cane sugar
  • 1 gallon filtered water
  • Optional: small splash of molasses or pinch of mineral salt
  • Directions Dissolve sugar in a small amount of warm water Add remaining water (not hot) Add
  • grains Add molasses or minerals if using (optional) Cover with a cloth or coffee filter Let sit on
  • the counter 24 to 48 hours It should taste lightly sweet and slightly tangy when ready Strain out
  • grains and repeat the process
  • Second ferment (for flavor and fizz) What you need Flip top bottles Finished kefir water Fruit or
  • juice (berries, lemon, ginger)
  • Directions Pour kefir into bottles, leave 1 to 2 inches space Add fruit or juice Seal bottles Leave
  • on counter 1 to 3 days Burp the bottles once or twice a day Open slowly to release pressure If
  • you don’t, they can build gas and explode After that, move to the fridge and enjoy. Remember to
  • burp them daily.

Notes

Water kefir is our newest ferment to hit the counter. It is simple and easier than kombucha with a
less tangy flavor. My 14 year old daughter is the one who taught me how to make it.
It has quickly become our Poppi soda and seltzer replacement.
