Peach Honey Jam (Low Sugar, Water Bath Safe)

Ingredients
  

  • 4 cups finely chopped peeled peaches (about 3 lbs fresh)
  • ¼ cup lemon juice (bottled preferred for consistent acidity)
  • ½ cup honey
  • cups sugar
  • 1 box Sure-Jell for Less or No Sugar Needed Recipes (pink box)
  • ½ tsp butter (optional, to reduce foam)

Method
 

  1. Peel and chop peaches. (Dip in boiling water 30 sec, then ice water — skins slip off easily.) Crush gently with a potato masher to get small chunks; measure 4 cups.
  2. In a large heavy pot, stir together peaches, lemon juice, honey, and pectin mixed with ¼ cup of your sugar. Add butter if using.
  3. Bring mixture to a full rolling boil over high heat, stirring constantly.
  4. Add the remaining 2¼ cups sugar. Return to a rolling boil and boil hard for 1 minute, stirring constantly.
  5. Ladle immediately into hot sterilized jars, leaving ¼-inch headspace. Wipe rims, apply lids/rings fingertip tight.
  6. Process in a boiling-water bath for 10 minutes.
  7. Remove jars and let rest 12-24 hours. Check seals. Label and store in a cool, dry place.

Notes

Yields ~6 half-pints or 12 four-ounce jars. Shelf life: 12 months unopened. Processing time: 10 minutes. Optional: Add ½ tsp cinnamon or ginger for a cozy spiced version. No altitude adjustment needed for Nebraska.
