Microwave Marshmallow Fudge

Ingredients
  

  • 3 cups granulated sugar
  • ¾ cup salted butter
  • cup evaporated milk
  • 4 cups mini marshmallows
  • 12 oz semi-sweet chocolate chips
  • 1 tsp vanilla

Method
 

  1. Line your 9×13 pan with parchment or foil, lightly greased.
  2. In a very large microwave-safe bowl (8-10 cup capacity), combine sugar, butter, and evaporated milk. Microwave 8 minutes total, pausing every 2 minutes to stir well. The mixture should be bubbling/foamy by the last interval. If not, microwave an additional 1-2 minutes.
  3. Add mini marshmallows and chocolate chips. Stir until completely melted and smooth. If needed, microwave in 30-second bursts to finish melting.
  4. Stir in 1 tsp vanilla until glossy.
  5. Pour into prepared 9×13 pan. Smooth the top. Cool at room temp 1-2 hours, then refrigerate until firm.
  6. Cut into small squares. Freeze if needed.

Notes

Yield: ~36 squares per 9×13 pan. Use a big bowl — fudge expands while heating. Microwaves vary — the sugar mixture MUST bubble hard at least once. Freezes perfectly.
