Banana bread cookies with brown butter frosting
Ingredients
- 1/2 cup unsalted butter (browned)
- 2 medium ripe bananas (mashed)
- 2/3 cup light brown sugar
- 1 large egg
- 3 tbsp sour cream
- 2 cups all purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- Icing:
- 1/2 cup Salted butter (browned
- 3 cups Powdered sugar
- 1 tsp Vanilla extract
- 3 tbsp milk
- Start by adding butter to a saucepan. Cook on medium to high heat until it’s bubbly and brown
- specks form in the bottom of the pan. Take it off the heat.
- Next in a bowl combine flour, baking powder, baking soda, and salt. Whisk together and set
- aside.
- In a large mixing bowl add browned butter and light brown sugar and mix. Add in mashed
- bananas, egg, and sour cream. Mix until well combined. Next fold in dry ingredients and mix
- well. Cover dough and place in the refrigerator for at least 2 hours.
- After dough is chilled use a one inch cookie scooper and scoop onto a parchment lined pan.
- Bake at 350 degrees for 9-12 minutes. Let cool.
- Icing:
- Start by browning butter by adding butter to a saucepan and cooking on medium to high heat
- until it’s bubbly and brown specks form on the bottom of the pan. Place browned butter in the
- refrigerator until it’s not liquid anymore and softly set. Next add brown butter to a mixing bowl
- and add in powdered sugar. Mix well. Then add vanilla extract and mix. Add in milk and mix.
- Top cooled cookies with icing and serve! This made 22 cookies!
