Potato Flake Sourdough Starter
Ingredients
Starter
- 1 cup warm water not hot! You don’t want to cook the yeast.
- 3 tablespoons instant potato flakes the cheap kind in the box works best.
- 3/4 cup granulated sugar.
- 1 packet 2 1/4 tsp active dry yeast.
Feed
- 1 Cup Warm Water
- 3/4 Cup Sugar
- 3 Tbps Potato Flakes not flavored
Instructions
- You just stir that up in a quart jar, leave it on the counter for a few days (4 or 5) to get bubbly, and boom, you’re a sourdough mom.
- Maintenance for Real Life
- The biggest hurdle with traditional sourdough is the daily "discard and feed". With Potato Flake Sourdough, we follow the "Once a Week" rule.
- Every Monday (or whatever day you pick), you pull that jar out of the fridge. It might look a little separated, liquid on top, sediment on the bottom. That’s okay. Just give it a stir.
- The Feeding Routine:
- Feed it: Add 1 cup warm water, 3/4 cup sugar, and 3 tablespoons of potato flakes directly into the jar.
- Let it wake up: Leave it on the counter for 8 to 12 hours. It’ll start bubbling and looking happy. (We call it a Lava Lamp)
- Take what you need: Pull out 1 cup of the starter to use for your bread or rolls.
- Back to sleep: Put the jar back in the fridge until next week.
