Ingredients

  • ○ 1 cup (227g) unsalted butter, softened
  • ○ 1 ½ cups (300g) granulated sugar
  • ○ 1 large egg
  • ○ 1 large egg yolk
  • ○ 1 tbsp vanilla extract
  • ○ 2 ¼ cups (280g) all-purpose flour
  • ○ ½ tsp baking soda
  • ○ ½ tsp cream of tartar (key to that chewy texture)
  • ○ ½ tsp kosher salt
  • ○ Optional: 2 tsp cornstarch (for extra tenderness)
  • ○ Optional: coarse sugar for rolling or sprinkling on top

Instructions

  • ○ Cream Butter & Sugar:
  • ○ In a large bowl, cream together the butter and sugar on medium-high speed for
  • 2–3 minutes until light and fluffy.
  • ○ Add Egg, Yolk & Vanilla:
  • ○ Beat in the egg, then the yolk, and vanilla. Mix until smooth.
  • ○ Dry Ingredients:
  • ○ In a separate bowl, whisk together flour, baking soda, cream of tartar, salt, and
  • optional cornstarch.
  • ○ Add dry ingredients to wet and mix just until combined. Don’t overmix.
  • ○ Chill:
  • ○ For best results, chill dough for at least 1 hour, or up to 24 hours.
  • ○ Dough will be sticky but firm enough to scoop once chilled.
  • ○ Shape:
  • ○ Scoop large balls (about 3.5–4 oz each, or ~¼ cup).
  • ○ Place spaced out on parchment-lined baking sheets — 6 per tray max.
  • ○ Bake:
  • ○ Bake at 350°F (175°C) for 11–13 minutes.
  • ○ Edges should be barely golden, centers will look slightly underbaked — that’s
  • perfect.
  • ○ Let cool on pan 5–7 minutes before moving.
  • ○ Optional:
  • ○ Sprinkle with coarse sugar while warm for sparkle and crunch.
