Banana Quick Bread

Ingredients

  • 1 1/4 cup Overripe bananas mashed, ~2–3 medium 300 g
  • 1/2 cup Melted butter or oil 115 g
  • 2/3 cup Sugar white, brown, or combo 150 g
  • 2 Eggs 100g
  • 1 tsp Vanilla extract 5g
  • 2 cup All-purpose flour 240g
  • 1 tsp Baking soda 5g
  • 1/2 tsp Salt 3g
  • 1/2 tsp Cinnamon optional 2 g
  • 1/2 cup Chopped nuts or chocolate chips optional 60–80 g

Instructions

Bread Machine Directions

    Load order for “Quick Bread” or “Cake” setting:

    • Mashed bananas
    • Melted butter
    • Sugar
    • Eggs
    • Vanilla
    • Flour
    • Baking soda, salt, cinnamon
    • Nuts/chips last
    • Program: Choose “Quick Bread,” “Cake,” or “Bake Only” (depends on your model)
    • Crust: Light or medium
    • Cycle time: Usually ~1 hr 20 min
    • If your machine doesn’t mix batter-type doughs well (some don’t for quick breads), stir gently with a silicone spatula once during the first 5 minutes of mixing to ensure all flour is incorporated.

    Oven Directions (if you prefer to bake manually)

    • Preheat oven to 350°F (175°C).
    • Mix wet ingredients in one bowl, dry in another, then combine just until smooth.
    • Pour into greased 9×5" loaf pan.
    • Bake 55–65 minutes, or until a toothpick comes out clean.
    • Cool 15 minutes before removing from pan.

    Notes

    Banana Nut Bread:
    Add ½ cup chopped walnuts or pecans.
    Chocolate Banana Bread:
    Replace 2 Tbsp flour with 2 Tbsp cocoa powder, add ½ cup chocolate chips.
    Cinnamon Swirl:
    Mix ¼ cup brown sugar + 1 tsp cinnamon and swirl into batter before baking.
    Brown Butter Banana Bread:
    Brown the butter first, cool slightly, then mix in for a rich, nutty flavor.
