Banana Bread Biscuits
Ingredients
- 2 cups all-purpose flour
- 1 Tbsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ¼ cup sugar (optional—skip if you want them less sweet)
- ½ tsp cinnamon (optional, but cozy)
- ½ cup cold butter, cubed
- 2 medium ripe bananas, mashed
- ¼ cup buttermilk (or regular milk with 1 tsp vinegar/lemon juice stirred in)
- 1 tsp vanilla extract
Instructions
- Preheat oven to 425°F. Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, sugar, and
- cinnamon.
- Cut in the cold butter with a pastry cutter or fork until the mixture looks crumbly (like
- coarse crumbs).
- In a separate bowl, mash bananas and stir in buttermilk + vanilla.
- Pour the banana mixture into the flour mixture. Gently fold until just combined—don’t
- overmix!
- Turn the dough out onto a floured surface. Pat into a 1-inch-thick round. Cut with a
- biscuit cutter (or a floured glass) and place on baking sheet.
- Bake for 12–15 minutes, until golden brown on top.
- Optional glaze (if you want a sweeter vibe):
- Whisk ½ cup powdered sugar with 1–2 tsp milk and drizzle over warm biscuits.
