Tortilla
- 6 cups flour
- 1tsp baking powder
- 2 tsp salt
- 1/2 cup fat of your choice (oils, butter, bacon grease, beef tallow, vegetable shortening, etc.)
- 2-3 cup hot water
- Add all dry ingredients, mix in your fat until your flour mixture is crumbly. Then add water slowly
- until your dough looks like dough. It will be sticky, but it shouldn’t be too wet and sticky. You’ll
- knead it for a few minutes until it is no longer sticking to your hands. Cover with a damp paper
- towel or plastic wrap, and let it rest for 30 minutes or more. Pinch off balls, these will be what
- you flatten. So make them the size you want- bigger means large tortillas, smaller means small
- tortillas. Cover and let rest again for another 30 minutes. Roll out very thin, thinner than you
- think you need. They will thicken during the cooking process. Cook on each side for 30 seconds
- or less, when the bubbles are browned. Remove and cover to trap moisture.
