Instructions

  • Preheat your oven to 400F and prepare a large baking
  • sheet by lining it with parchment paper. Grab the butter and
  • place it in the freezer for 10 minutes.
  • Take out a bowl and add the all-purpose flour, brown sugar, salt,
  • black pepper, baking powder, and baking soda.
  • Give the dry ingredients a good stir.
  • In another bowl, whisk the egg.
  • Now, add the Greek yogurt and milk.
  • Give the wet ingredients a good stir.
  • Pour the wet ingredients into the dry ingredients.
  • Use a spatula to combine the ingredients until you get a
  • slightly sticky dough.
  • Remove the butter from the freezer and grate it into the
  • dough.
  • Start kneading the dough until all the butter is
  • incorporated.
  • Add the cheese, ham, and green onion.
  • Use the spatula to fold in the ingredients. Flour your
  • surface and place the dough on the table. Create a ball with the
  • dough.
  • Flour both sides of the dough and start creating an
  • 8-inch circle using your hands.
  • Cut the circle into 8 triangles.
  • Place each triangle on the baking sheet, making sure
  • they have enough space in between.
  • Sprinkle some more cheese, ham, and chives on top
  • of each scone.
  • Place the scones in the oven and bake for 18-20
  • minutes until they are golden. Let them cool down for 5 minute
  • and then you can enjoy them.

Ingredients and Substitutes
Cups all-purpose flour (2 1/2) – Substitute with an equal amount
of whole wheat flour or use a gluten-free all-purpose blend if
you want to create gluten-free scones.
Light brown sugar (1/3 cup) – Replace with white granulated
sugar or coconut sugar.
Salt (1/2 tsp)
Black pepper (1/4 tsp)
Baking powder (1 tbsp)
Baking soda (1/2 tsp)
Egg (1 large)
Plain Greek yogurt, full fat (1/2 cup) -You can also use sour
cream, cottage cheese (blended), buttermilk, or silken tofu
(blended).
Milk (2 tbsp) – Swap for any plant-based milk of your choice,
like almond or oat milk, just make sure it’s unsweetened.
Unsalted butter, very cold (1 stick, 4 oz) – Solid coconut butter
or ghee are good alternatives.
Shredded cheddar cheese (1 cup) – Substitute with your
favorite cheese. I’ve tried using mozzarella, Monterey Jack,
Pepper Jack, or a dairy-free option.
Diced ham (1/2 cup) – You can also use bacon, turkey sausage,
or even a vegetarian alternative, like mushrooms.
Chopped green onion (1/3 cup) – Use finely chopped chives,
leeks, or shallots.
